Spicy Breakfast Burritos and Cayenne Fried Potatos

A delicious and unique recipe for a spicy breakfast combining classic breakfast favorites with Southwestern flavors.

Spicy Sausage, Egg and Cheese Breakfast Burritos

The word “burrito” might conjure up images of beans and rice, but these breakfast burritos contain ingredients better suited for a side of fried potatoes than a side of tortilla chips. This recipe is quick and easy and can be divided to make a single serving or multiplied to serve a family.

Ingredients

  • 4 breakfast sausage links (or spicy sausage links, for extra kick.)
  • 4 large eggs
  • ½ cup shredded Mexican cheese blend
  • 6 tbsp chunky salsa (medium or hot.)
  • 2 tbsp milk
  • 2 large flour tortillas

Preparation

Start by browning the meat, as it takes the longest to prepare.

  • In a small skillet, brown sausage links.
  • Remove links from heat and pat with paper towel to remove excess grease.
  • Cut links into half inch pieces

Once the sausage is frying, begin mixing the burrito filling.

  • Add milk to eggs in a medium bowl. Break yolks and stir with fork until lightly blended.
  • Add ¼ cup cheese, 4 tbsp salsa and sausage pieces; mix until cheese and sausage pieces are moist.

Cooking the Sausage, Egg and Cheese Filling

  • Coat large skillet with non-stick spray and pour egg mixture into skillet. Heat on medium-low and scramble eggs until firm.

Making the Burrito

  • Divide filling evenly between two flour tortillas. Keep the filling near the center of the tortilla, leaving room on the sides to fold wrap.
  • Top each filled tortilla with 1 tbsp salsa and 1/8 cup cheese.
  • Fold bottom section of tortilla upward, and sides inward, laying one side over the other to create burrito fold.
  • Microwave each burrito separately for 20-30 seconds or until cheese is melted and tortilla is warm.

Topping SuggestionTry topping with spoonful of sour cream or guacamole to add color and complement the Mexican flavors of the cheese and salsa.

Breakfast burritos make a fun and tasty main course, but the right side dish can pull a meal together. These spicy breakfast potatoes only take a few minutes to prepare.

Cayenne Fried Potatoes

Cayenne pepper is a way to add a distinct spicy flavor to any vegetable. The World’s Healthiest Foods website provides nutritional information on cayenne, which contains vitamins like A, C and B6 and dietary fiber. According to the site, cayenne pepper has also been shown to improve circulation and fight inflammation.

Ingredients

  • 1 can sliced white potatoes
  • 2 tbsp minced onion
  • 1 tbsp olive oil
  • Cayenne pepper, to taste

Preparation

  • Heat oil in medium skillet.
  • Drain potatoes and add to skillet, along with onion.
  • Season to taste with cayenne pepper.
  • Stir fry until golden brown.

Serves 2
