A Warming Vegan Winter Breakfast in Five Minutes

This banana porridge recipe is really healthy and suitable for vegans although it makes a tasty, warming and nourishing breakfast for anyone.

Porridge is the perfect winter alternative to breakfast cereal. For anyone who likes to cook their own food, this is simpler to make from scratch than Granola so ideal for days when in a hurry. Porridge is warming in the winter months and will help to keep the immune system healthy on frosty mornings, not to mention provide a cheering warm feeling in the stomach.

Quick Banana Porridge Recipe

Ingredients: Makes one large filling bowl; simply double up for more servings.

  • 200ml filtered water
  • 50g jumbo rolled porridge oats
  • 1 large banana, sliced into chunks
  • Pinch of salt
  • 1 tbsp of fructose or agave syrup if desired
  • Half a tsp of powdered cinnamon
  • 1 tbsp of flaked almonds, either toasted or just as they come
  • Small handful of seeds; choose from pumpkin, sunflower, sesame, cold milled flax seeds

Cooking the Porridge:

  1. Place the water in a small pan and bring to the boil.
  2. Add the salt, fructose and oats.
  3. Bring the porridge back to a rolling boil again and then reduce to a simmer.
  4. Once the porridge is simmering, add the sliced banana, flaked almonds and cinnamon and continue to cook until it is done. The amount of water can be adjusted to taste depending on whether a very loose or a stiffer porridge is desired. Keep stirring the porridge during cooking to make sure that it does not stick around the edges of the pan.
  5. Once the porridge is cooked, serve sprinkled with the chosen seeds and enjoy piping hot.

Variations:

  • Banana porridge is fairly sweet but in this recipe, unrefined sugar is used which is a little less taxing to the system. The fructose or agave syrup could be left out if desired.
  • Maple syrup is an alternative sweetener with a distinct flavor and this works well poured on hot porridge.
  • Non vegans could serve this porridge with Greek yogurt and honey.
  • For a creamier porridge which will make a richer and more calorific breakfast, substitute the water for soya, nut, rice or oat milk. Non vegans could also use cows milk.
  • Other tasty vegan toppings for this porridge include raw cacao nibs, seasonal berries, seasonal fruit compote, toasted hazelnuts and dried apricots.
  • Vegan body builders can stir 1 - 2 scoops of vanilla or banana vegan protein powder in to this breakfast as a supplement or non-vegans could use whey protein. Fat reduced peanut butter also makes a good topping for the porridge if wishing to up the protein content of the breakfast a little.
  • All the seeds apart from the cold milled flax seeds could be toasted first to add to the nutty flavor.
