A Mature Twist to a Classic Breakfast Favorite

This caffeinated concoction is sure to wake you up in the morning!

This is a great dish for those breakfast in bed occasions, like anniversaries, Valentine's day, or birthdays, combining the rich bold taste of coffe with the sweet taste of chocolate. And it's quick and easy to make! Takes about 15 minutes to prepare.

Ingredients (makes 4 pancakes; serves 2)

  • 1 cup sifted all-purpose baking flour
  • 1 teaspoon baking powder
  • 3/4 cup milk
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 egg
  • 1 teaspoon butter
  • 2 shots of expresso (may be substituted for coffee run through the machine twice, or Taster's Choice instant coffee grounds mixed with the milk, heated, rather than water.)
  • Handful of semi-sweet baking chocolate chips, or special dark chocolate chips

Directions:

  1. In a bowl, combine the egg, milk, vanilla, and expresso or coffee, and mix until it is well blended.
  2. Add the flour, baking powder, and salt while stirring, until the mixture is smooth and free of lumps.
  3. Heat the pan or gridle. Reduce to medium heat. Use a forth of the butter to coat the bottom of the pan.
  4. Scoop about 1/4 of a cup of the pancake mixture into the pan, so that it forms a round disc. Add 1/4 of the chocolate chips evenly over the disc, before the disc solidifies.
  5. When the edges of the pancake begin to turn brown, flip the pancake over, and brown on the other side as well.
  6. Repeat until all the batter is used up.

Serving tips:

  • This dish could easily look restaurant worthy with a dash of powdered sugar on top, a couple chocolate bits or shaved chocolate as garnish, and chocolate syrup or caramel syrup drizzled slightly over the top.
  • Also, when placing the chocolate chips in the batter, rather than evenly distributing them, one could place the chocolate chips to form a shape (such as a heart) or write a message (like good morning).
  • For a younger crowd, a bit of whipped cream or chocolate sprinkles will make this breakfast item seem like a dessert like treat.
  • Directions for using Taster's Choice instant coffee instead of expresso:
  • While using instant coffee rather than expresso shots isn't recommended (since the strength of the coffee will not compare to the strength of the expresso), not everyone has an expresso machine at home. Just heat the milk in the microwave for a few seconds (make sure it doesn't bubble over. Time will vary by microwave.) and stir the coffee grinds directly to the heated milk. Use 4 scoops of instant coffee grinds. Substituting coffee brands may not work, because Taster's Choice specifically seems to dissolve well in non-boiling liquids.
