The First Meal Is The Most Important, So Why Make It Boring?

For those of us on the go, breakfast is often neglected, or skipped all together. Now the most important meal is the also the most fun.

Let's take breakfast to whole new level. Grabbing a bagel, or a piece of toast on the go makes breakfast a less than appealing meal. Here are some great recipes for spicing up your morning munching.

Blueberry Coffee Cake

INGREDIENTS

  • Ingredients for Coffee Cake:
  • No-Stick Cooking Spray
  • 1 1/2 cups all-purpose flour, divided
  • 1/4 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground allspice
  • 1/3 cup butter or margarine, melted
  • 1 egg
  • 2/3 cup milk
  • 3/4 cup Blueberry Preserves

Ingredients for Topping:

  • 1/4 cup firmly packed brown sugar
  • 1/4 cup chopped walnuts
  • 2 tablespoons flour
  • 1 tablespoon butter or margarine

DIRECTIONS

  1. Heat oven to 400 degrees F. Spray 8- or 9-inch square baking pan with no-stick cooking spray. Lightly spoon flour into measuring cup; level off.
  2. In medium bowl, combine 1 1/2 cups flour, sugar, baking powder, salt and allspice. Add melted butter, egg and milk. Mix vigorously until well blended.
  3. Pour half of batter into greased and floured pan; spread preserves evenly over batter. Top with remaining batter.
  4. Combine topping ingredients; mix until crumbly. Sprinkle over top of coffee cake.
  5. Bake at 400 degrees for 20 to 25 minutes or until toothpick inserted in center comes out clean.

Fresh Fruit Pitas with Chocolate-Berry Sauce

INGREDIENTS

  • 1 cup cold reduced fat milk
  • 1 (1 ounce) box instant sugar free chocolate pudding and pie filling
  • 1/2 cup reduced fat sour cream or yogurt
  • 1/2 cup Strawberry Preserves
  • 8 mini sized whole wheat pita pockets
  • 4 cups assorted fresh fruits like bananas, pineapple, cantaloupe, strawberries and grapes

DIRECTIONS

  1. Mix milk and pudding with electric mixer for 2 minutes; stir in sour cream and preserves mixing until well combined.
  2. Cut an opening across the top of the pita. Fill with 1/2 cup fruit and dollop with 1/4 cup chocolate sauce; serve immediately.

Breakfast Enchiladas

INGREDIENTS

  • 1 (16 ounce) package frozen hash brown potatoes
  • 1 cup diced cooked ham
  • 1 tablespoon vegetable oil
  • 1 (4.5 ounce) can diced green chile peppers
  • 1 1/2 cups shredded Cheddar cheese, divided
  • 1 (28 ounce) can green chile enchilada sauce
  • 8 (10 inch) flour tortillas

DIRECTIONS

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Brown hash browns and ham in 1 tablespoon of oil in a medium skillet over medium high heat. Stir in diced green chilies and 1/2 cup of Cheddar cheese. Cook until cheese has melted.
  3. Coat the bottom of a 9x13 inch baking dish with a small amount of enchilada sauce. Dip each tortilla in remaining sauce, and fill with potato-ham mixture. Roll each as tightly as possible and place in the baking dish, seam side down. Top with remaining sauce and cheese, and cover with tin foil.
  4. Bake, covered, in the preheated oven for approximately 20 minutes. Remove foil and bake for another 10 minutes, or until lightly browned on top. Serve immediately.

Breakfast Casserole

INGREDIENTS

  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (16 ounce) container sour cream
  • 1 (2 pound) package frozen hash brown potatoes, thawed
  • 1 cup cubed, cooked chicken meat
  • 1 cup diced ham
  • 1 onion, chopped
  • 3/4 cup shredded Cheddar cheese
  • 1 cup crushed potato chips
  • 1/4 cup butter, melted

DIRECTIONS

  1. Combine undiluted soup, sour cream, hash browns, cubed chicken and ham, onions, and cheese. Pour into a lightly greased 9 x 13 inch pan.
  2. Bake at 350 degrees F (175 degrees C) for 30 minutes. Top with crumbs, and drizzle with melted butter or margarine. Bake for another 15 minutes.
