Lavender pancakes bring the goodness of the garden indoors, capturing the delicate floral essence of lavender.

Pancakes made with lavender are a special treat, offering the flavor of lavender in a popular breakfast food.

Food trends are changing. Chefs and home cooks have discovered florals and their potential to enhance recipes. Lavender, as an aromatic culinary ingredient, lends an exotic taste to batters and baked goods.

Lavender pancakes may sound a little different but they are easy to make and even easier to eat.

How to Make Pancakes with Lavender

  • Use dried culinary lavender buds.
  • Use dried, ground lavender.
  • If lavender plants are grown in the home garden, fresh rinsed lavender flowers can be folded into pancake batter.
  • Lavender sugar can be used in place of regular sugar.

Recipe for Lavender Pancakes

  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1/2 tsp. salt
  • 2 tbsp. white sugar
  • 4 tsp. baking powder
  • 1/2-1 tsp. dried lavender buds

Mix dry ingredients, then add:

  • 2 eggs
  • 1 cup of milk
  • 1 cup water
  • 4 tbsp. oil or melted butter

  1. Whisk ingredients together, stirring batter until free of lumps.
  2. Adjust liquid amounts so that pancake batter is the desired thickness.
  3. Drop pancakes onto a hot greased griddle and cook until bubbles form, then flip over and continue cooking until both sides are golden and lavender hotcakes are cooked in the middle.

  • When cooking with lavender, remember that a little goes a long way.
  • Dried lavender has a stronger flavor.
  • Lavender buds are fibrous and add texture to pancakes.
  • Some cooks choose to grind their culinary lavender using a small coffee grinder.
  • If using lavender sugar, simply replace sugar in recipe and forego using culinary lavender buds or fresh lavender flowers.

High Fibre Lavender Griddlecakes

This recipe for lavender pancakes can be adjusted to increase the fibre for wholesome griddle cakes with a denser texture.

  1. 1 cup of whole wheat flour + 1 cup of Kamut flour
  2. 1 1/2 cups Kamut flour + 1/2 cup 7 grain cereal

Serving Suggestions for Lavender Pancakes

  • Lavender pancakes can be served with butter and pancake syrup
  • Top lavender pancakes with lavender whipped cream: add 1/4-1/2 tsp. of ground lavender to cream prior to whipping
  • If fresh lavender is available, garnish pancakes with flowers before serving.
