A simple dish that can be prepped for cooking the night before, this casserole will please a hungry morning crowd.

The holidays are fast-approaching and for most families that means one thing is for certain, houseguests. Homes that may be typically serene in the mornings will be abuzz with hungry people hovering in the kitchen during the holiday season. The best way to deal with any hungry morning mob is to be prepared to a serve hearty meal that will give all guests a great start to their day.

Breakfast casseroles are by far the easiest way to feed a big crowd in the morning. That is why casseroles in the morning are a great breakfast solution during the holidays and other busy family weekends. Many breakfast casseroles can be prepared the night before which is a great time-saving benefit. If preparing to store the night before, it is best to use a metal pan. Simply grease and prepare the pan with the crumbled tater tots and pour the egg mixture over the tots. Cover and place in the refrigerator. In the morning, remove the dish from the refrigeration and simply pop it in the oven. Saving just a few steps in the morning will leave more valuable time for visiting with guests.

This tasty breakfast dish is made with a crust of crumbled hashbrowns covered with savory scrambled eggs, cheese, bacon pieces, green onions and spices.

Cheesy Hashbrown Breakfast Casserole

What you will need:

  • 1 package (32 oz.) frozen tater tots
  • 8 eggs
  • 3 green onions
  • 1 tsp dried parsley
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • each salt and pepper about a 1/2 tsp of each
  • 1 1/2 cups shredded cheddar cheese
  • 6 pieces of cooked bacon, crumbled

Preheat the oven to 375 degrees.

  1. Cook the bag of tater tots according to package directions. Once they are cooked and crispy on the outside, remove from the oven and allow them to cool. Lightly grease and 13 X 9 inch baking dish.
  2. Finely slice the green onions.
  3. While the tots are cooling, break the eggs into a bowl. Using a whisk or a fork carefully mix the eggs until they are smooth. Add the green onions, parsley, garlic powder, onion powder and salt and pepper. Mix well.
  4. Crumble the tater tots into the greased baking pan.
  5. Pour the scrambled eggs over the crumbled hashbrowns.
  6. Place the baking dish in the oven. Check on the casserole after about 15 minutes and continue to cook until the eggs are firm.
  7. Top the casserole with shredded cheese and bacon pieces and return to the oven for about 5 minutes or until the cheese is melted.
  8. Serve and enjoy.

***This dish is great served with a side of fresh fruit or tomato slices.

*** For a spicy twist serve with some warm, fresh salsa on the side.
