Oatmeal and Fruit Dessert Bars

If you're looking for something sweet and different for breakfast, give these fruity oatmeal dessert bars a try.

Breakfast. It should be simple, but it can sometimes be one of the most challenging meals of the day to prepare. If yours is like most families, breakfast is generally a hurried affair with the same few items finding their way to the table on a regular basis.

If that's the case in your home, there's good news. It only takes one or two new items added to the regular choices to really get the folks in your house interested in breakfast again.

The following recipe calls for just five ingredients which makes it super quick and easy to prepare. But if mornings are extra busy at your house, bake it up the night before so it's on hand and ready to serve bright and early the next morning. If you prefer to eat these bars warm, a few seconds in the microwave is all it takes.

Apple butter is the filling of choice for most who have tried this recipe. It's bold flavor complements the oatmeal well. However, for the filling, you can choose any fruit spread of similar consistency that your family enjoys. Musselman's also makes a great combination apple, cherry, and peach fruit spread (similar to apple sauce) that works well to flavor these bars. You may also wish to vary this recipe using a variety of favorite pie fillings.

Oatmeal and Fruit Breakfast Bars

  • 1-1/4 cup flour
  • 1 cup packed brown sugar
  • 3/4 cup butter or margarine, cut into pieces
  • 3/4 cup apple butter or similar filling
  • 1 1/4 cup quick cooking oats

Directions:

  1. In a large bowl, mix the flour and the sugar. Cut in the butter until the mixture resembles coarse crumbs. Stir in the oats until well blended.
  2. Press half of the mixture (about 2 and 1/2 cups) in a greased 8 inch square pan to form a compact layer. Spread apple butter or other filling of your choice to within 1/2 inch of the edges. Be careful not to take the filling all the way to the edge, as it might cause the outer sides of your bars to burn. Sprinkle the remaining oat mixture over the filling. Press carefully, but firmly.
  3. Bake in preheated 350 degree F. oven for about 40 minutes or until lightly browned. Place the pan on a rack to cool. Cut into 1 x 4 inch bars or 2 inch squares. Makes approximately 16 bars.
  4. This recipe can also be doubled using a 9" x 13" pan instead.

If any of these bars make it past breakfast, they also make a great afterschool snack, or dessert.
