Ever want to fix an exquisite breakfast while remaining affordable? This basic waffle recipe is adjustable so each family member can order their own favorite waffles!

On the next three-day weekend, holiday, or company time serve up easy homemade waffles. Many of the ingredients are in your pantry or fridge. Prepare the basic batter, heat up your waffle iron while setting the table, pouring juice and laying out toppings. Then cook these waffles and serve hot.

Kitchen Items Needed for Making Waffles

  • waffle maker (some put a cutting board under it to protect counter top from heat)
  • mixing bowl
  • measuring cups
  • a chopstick for removing waffles
  • flour sifter (optional, makes the batter oh so light)

Ingredients for Basic Waffle Batter

Dry Ingredients:

  • 1 1/2 cups flour (sifted is best, can combine white and wheat if desired)
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 3 teaspoons double-acting baking powder

Wet Ingredients:

  • 2 large eggs, separated (Use only yolks now and save the whites in another bowl)
  • 1/2 cube of butter (this = 1/4 cup) or vegetable oil of your choice
  • 2 cups milk (can combine part fresh and part powdered if needed)

Directions for Making Easy Waffles

  1. After assembling above ingredients, read waffle iron's instructions carefully.
  2. Put waffle maker on a safe place where cord is not hanging out, and start heating as per your instruction booklet. (Some cooks like to spray the waffle with spray oil.)
  3. Combine and mix dry ingredients in bowl.
  4. Gently stir in wet ingredients.
  5. Beat the two egg whites till stiff and fold them into batter gently using back of spoon.
  6. Using about 1/2 cup per waffle, pour batter into middle of bottom layer and spread leaving an inch around the edge before closing the cover.
  7. Cook as per instruction booklet.
  8. Once the batter is poured in, wait to raise lid till it is done, using light or timer on your waffle iron.
  9. After opening the lid, get the waffles out with a single chopstick stuck into a waffle. (Usually all four will come out at once.)
  10. Serve as a foursome or break into four servings.
  11. Close lid while serving that batch. In a moment it will be hot enough for another batch.
  12. Repeat steps 6 through 10.
  13. When the batter is gone, eat the last one or two and sit down to rest. Makes about 6-8 waffles.

Serving Suggestions

Toppings can include butter and your favorite syrup. However, pudding, yogurt or fruit, or the two mixed together is also delightful on waffles. Put toppings on the table, island, or other buffet area and let each person design their own topping. You can include jam, jelly, or even favorite ice cream toppings!

Try adding fruit, especially blueberries to the batter. It will liven up the taste.

For an exciting twist try pecan halves or bacon. These can be done after fixing plain waffles for family members who prefer no extras. Then, after pouring the batter in, place a few pecan halves on each waffle. Another day try using two slices of bacon for a four-waffle iron. Lay down the strips of bacon after pouring the batter, making a large X with the bacon. It will extend approximately from corner to corner of the waffle iron, giving each of the waffles a delicious taste twist.

Waffles are not just for breakfast. They can be served under a creme sauce with ham, turkey or other available meat with added veggies. Also, leftover waffles make excellent sandwiches after slight toasting to revitalize them.

So dust that waffle iron off. Check your ingredients. Plan to assemble your dry ingredients, then add the wet ingredients and cook up a batch of waffles. After seeing all the ways they can be served, your family will be clamoring for more. Maybe next Saturday?
